101/365 Superfood
I am making home made yogurt with superfood probiotic L Gasseri today (and other probiotics to help it along). It will percolate in the cooker on "proof" ~ 100 F for 36 hours. It needs that long to really grow and do its thing. It is touted to be very good for the gut biome and I am happy with the results. I have been making this for about 5 months now.
Since I don't use sedatives for my colonoscopy so I was awake and I had a great 20 minute conversation with my gastroenterologist who says my gut is in great shape. I learned (and saw a lot - fascinating! ). Interestingly, she said she believes the rapid increase in early colon cancer (people in their 30's) is due mainly to processed meats (but also overly processed foods) and possibly a genetic predisposition egged on by the processed meats and overuse of antibiotics. Overly processed foods completely changes our gut microbiome as do antibiotics. So what to feed our kids in their school lunches?
But I do enjoy a thick pastrami on rye once in a blue moon. :)
